Silan Roasted Carrots:
2 Packs Rainbow Carrots
2 Tbsp Dijon Mustard
4 Tbsp Silan
2 Cloves Garlic (Microplane)
3 Tbsp EVOO
Kosher Salt
Ground Black Pepper
Shelled pistachios

Preheat your oven to 350. Coat your pan and carrots
with some olive oil. -
In a small bowl combine dijon mustard, silan, garlic,
EVOO, salt & pepper to taste. Coat carrots with half
of your sauce (reserve the rest to coat your carrots
again once they’re fully roasted). - Roast carrots in the oven for 60 mins.
- Toast pistachios & rough chop.

Make your spicy whipped feta base and spread
evenly on a platter. -
Once your carrots are completed, coat with
reserved sauce and assemble on top of your spicy
whipped feta. Top with chopped pistachios.
