Serves 2-4
INGREDIENTS
- 2 cans fava beans (14 oz. can)
- 1/2 tsp. ground cumin
- Kosher salt, to taste
- Black pepper, to taste
- 3 Tbsp. Saturday Sauce
- 1 Tbsp. fresh parsley, chopped
- Pinch of Ground sumac
- Extra virgin olive oil, for finishing
- Sea salt, for finishing
Suggested Toppings:
- Israeli Salad
- Soft boiled egg
- Pickles
- Olives
- Tahini
Suggested Pairings:
- Pita
DIRECTIONS
- In a saucepan, warm the fava beans with their liquid over medium heat.
- Once heated through, add 3 heaping tablespoons of Saturday Sauce and mash the mixture gently. You want a rustic, chunky texture — not a smooth purée.
- Spoon into a serving dish. Add your toppings and a side of pita.
- Season the tahini with a pinch of sumac, then drizzle it over the beans if desired.
- Finish the dish with a generous drizzle of extra-virgin olive oil, flaky sea salt, and the chopped fresh parsley.
