Cabbage Bolognese

It’s the year of cabbage, so we made our own take on the viral cabbage “pasta.” Except it’s not actually pasta—it’s more like a deconstructed stuffed cabbage. Ground beef, sautéed cabbage, and Saturday Sauce come together in one pan for a dish that’s high in protein, low in carbs, and packed with flavor. Simple, satisfying, and easy to make, this cozy recipe deserves a spot in your weeknight dinner rotation.

INGREDIENTS
- 1 lb ground beef
- Ground beef seasoning mix (1 tsp. of each of the following dry spices: 1 tsp. ground black pepper, 1 tsp. Kosher salt, 1 tsp. onion powder, 1 tsp. garlic power, 1 tsp. cumin, 1 tsp. paprika)
- 1 head green cabbage, core removed and thinly shredded
- 1 small onion, halved and thinly sliced
- 1 tsp. kosher salt
- 1 jar (16 oz.) Saturday Sauce (Mild recommended)
- 1 tsp. silan (date syrup)
DIRECTIONS
- Cook the beef: In a large deep pan over medium-high heat, cook the ground beef. Add all the seasoning mix right away and break up the meat with a wooden spoon as it cooks. Continue cooking until the beef is browned and cooked through.
- Set aside: Transfer the cooked beef to a bowl and set aside. Leave a small amount of the rendered beef fat in the pan to cook the cabbage. (Alternatively, remove the fat and use about 1 tablespoon extra-virgin olive oil.)
- Cook the cabbage and onion: Add the cabbage and onion to the pan and toss well so everything is coated in the fat or oil. Season with Kosher salt. Cook over medium heat with a lid on, stirring occasionally. The cabbage and onion should both sauté and steam, becoming soft but not crispy, about 10 minutes.
- Add sauce and beef: Return the ground beef to the pan and add the jar of Saturday Sauce. Stir to combine. Cover and cook over medium heat for about 5 minutes so the flavors come together.
- Finish with silan: Stir in the silan and cook for another 5 minutes, allowing the sauce to thicken slightly.
- Serve: Serve warm and enjoy!
Note: This recipe also works well with ground turkey or chicken—or can be made vegetarian by skipping the meat entirely.
