Do you need a recipe for this? No. Did we create one anyway? Of course. This customer-favorite stacks crunchy sourdough with mashed avocado, Saturday Sauce, egg, feta, and herbs. Think deconstructed shakshuka + avocado toast—simple, satisfying, and exactly how we like to eat.

Serves 1-2

INGREDIENTS

  • 2 slices sourdough bread, toasted
  • 1 ripe avocado
  • 2 eggs (fried, soft-scrambled, or jammy—your call)
  • 2–3 Tbsp Saturday Sauce
  • 2 Tbsp crumbled feta
  • Fresh parsley, finely chopped
  • Extra virgin olive oil
  • Flaky sea salt & freshly cracked black pepper

 

DIRECTIONS

  1. Toast the bread until golden and crunchy.
  2. Mash the avocado with a pinch of salt and pepper (and a drizzle of olive oil if you’re feeling generous).
  3. Cook the eggs to your liking—runny yolks highly encouraged.
  4. Assemble: Spread mashed avocado over the toast. Spoon Saturday Sauce on top.
  5. Finish strong with eggs, feta, and a shower of fresh parsley.
