Do you need a recipe for this? No. Did we create one anyway? Of course. This customer-favorite stacks crunchy sourdough with mashed avocado, Saturday Sauce, egg, feta, and herbs. Think deconstructed shakshuka + avocado toast—simple, satisfying, and exactly how we like to eat.
Serves 1-2
INGREDIENTS
- 2 slices sourdough bread, toasted
- 1 ripe avocado
- 2 eggs (fried, soft-scrambled, or jammy—your call)
- 2–3 Tbsp Saturday Sauce
- 2 Tbsp crumbled feta
- Fresh parsley, finely chopped
- Extra virgin olive oil
- Flaky sea salt & freshly cracked black pepper
DIRECTIONS
- Toast the bread until golden and crunchy.
- Mash the avocado with a pinch of salt and pepper (and a drizzle of olive oil if you’re feeling generous).
- Cook the eggs to your liking—runny yolks highly encouraged.
- Assemble: Spread mashed avocado over the toast. Spoon Saturday Sauce on top.
- Finish strong with eggs, feta, and a shower of fresh parsley.
