Chicken Shawarma Pita Chip "Nachos"

This Middle Eastern take on nachos has it all— earthy Shawarma-spiced chicken thighs, fresh and crunchy purple cabbage and spicy arugula, a drizzle of creamy tahini, dollops of Saturday Sauce, topped with chopped pickles and fresh herbs, creating the perfect bite. 

Serves 2-4 (Makes a Half Sheet Pan Tray) 

1 lb. Boneless Chicken Thighs
1-2 Tbsp. Shawarma Spice Blend of your choice (like La Boite's Shawarma West Spice Blend) 
1-2 Sprays of Extra Virgin Olive Oil or Avocado Oil
1/8 Head of Purple Cabbage, Thinly Shredded & Washed 
1-2 Handfuls of Arugula 
1/2 Cup Tahini of your choice (we love the store bought Tahini Sauce from Little Sesame) 
6 Tbsp. Saturday Sauce
1/4 Cup Canned Pickled Cucumbers in Brine, Drained & Chopped 
1 Tbsp. Fresh Cilantro, Chopped  

  1. Toss your chicken thighs in a shawarma spice blend until all pieces are coated. Before placing your chicken thighs in the air fryer, spray them with a bit of olive oil or avocado oil, as well as the air fryer pan. Set the airfryer to the chicken setting, cooking for about 20-25 minutes and flipping halfway through. Your chicken should be fully cooked, looking golden brown with slightly crispy edges once done. Set chicken aside to cool before chopping it into small pieces. 
  2. On a half sheet pan tray, arrange your pita chips as the bottom layer. Add your arugula as the next layer, followed by half of your cooled, diced chicken. Add your shredded cabbage on top, then your remaining chicken and drizzle with tahini. Add your dollops of Saturday Sauce throughout the pan. Top with chopped pickles and fresh herbs and serve. 

Tip & Tricks
  • The key to making sure your pita chips stay crispy is using a larger, thicker or twice oven-baked pita chip (like Zaza's) and making sure to load the pita chips with the "driest" layer directly on top first. Make sure any wet sauces are on the topmost layer of your nachos to ensure your pita chips stay crunchy. To avoid any excess liquid resulting in a soggy pita chip, make sure all of your produce has been fully dried after washing, Make sure your pickles have been fully drained and dried before chopping. 
  • We love this recipe because you have the option to simplify preparation with store bought ingredients like the shawarma spice blend and tahini. Aside from preparing the chicken there is no additional cook time required.
