Saturday Sauce Breakfast Burrito

This breakfast burrito recipe is next-level flavorful thanks to a scoop (or three) of Saturday Sauce, plus other toppings that are completely customizable using what you have on hand. 

Prepare

1 Tbsp. Green Onions, Sliced

1 Tbsp. Fresh Cilantro, Chopped

Quarter Avocado, Sliced

1 Radish, Sliced 

1/2 Cup Breakfast Potatoes (or 1 Hash Brown)- frozen/store-bought or homemade

Cook & Assemble

1 tsp. Extra Virgin Olive Oil

1 Egg, Beaten & Combined with sliced green onion and fresh chopped cilantro

1 Pinch Kosher Salt

1 Pinch Black Pepper

1 Large Tortilla

1-3 Tbsp. Saturday Sauce


  1. Prepare your burrito inclusions: slice your green onions, chop your cilantro, slice your quarter avocado as well as your radish. If your breakfast potatoes are store-bought/frozen, heat in the oven (or in a pan) until cooked through and crispy. I used one Manischewitz frozen hash brown patty and cooked at 425 degrees for about 20 minutes, flipping halfway through. Set aside. 
  2. Heat your extra virgin olive oil in a pan and once hot, add your eggs and herbs (plus your pinch of Kosher salt and pinch of black pepper), flipping at least once. Remove once eggs are cooked to your liking and set aside. 
  3. Toast your tortilla over an open flame, flipping often until you see some bubbling and charring. Remove tortilla once cooked to your liking (avoid toasting until crispy so that your tortilla doesn't break). You'll want to assemble your burrito while the tortilla is still hot so that it is malleable. 
  4. Layer the toppings inside your tortilla including your Saturday Sauce, cooked eggs, potatoes, avocado and radish. Fold the sides of your burrito in first and the tortilla over from the top, tucking in any toppings as your fold over and seal your burrito. Cut in half and serve or wrap the bottom with foil and eat whole. Make sure you have some extra Saturday Sauce for dipping on the side!

Substitutions and/or Additions

  • Eggs can be plain (herbs omitted) or you can add any cooked veggies that you like: diced mushrooms, chopped spinach, etc.
  • If you don't have/want to use potato, beans (refried or whole) are a welcome addition or substitution. 
  • If you don't have/want to use radishes, they can be omitted or subbed for another crunchy element like shredded cabbage. 
  • A pickled element (like pickled red onions) is a welcome addition for some added acidity. 
  • Add cheese to this burrito (we'd recommend Monterey Pepper Jack cheese or a Mexican blend).
